Kichidi
What’s special about this protein and carb rich diet? It’s easy to make and very healthy to eat.
Ingredients:
1 cup Rice
½ cup split green moong dal or yellow moong dal
1 sprig curry leaves
1 inch piece ginger
1 piece garlic
¼ tsp cumin seeds
1 pinch asafetida
3 nos red pearl onions cut long.
¼ tsp Mustard seeds
Salt to taste.
Wash the dal and rice and mix it up. Keep this aside.
Heat a little oil in a pan, just enough for seasoning. To this, first add the mustard seeds and wait till they splutter. Then add the rest of the ingredients and fry till they turn crisp.
Add this seasoning to the uncooked rice and dal.
Put this mixture in a rice cooker, add sufficient water and cook.
